Chocolate Chip Banana Bread

Today I will be sharing my recipe on my World Famous Banana Bread.  And when I say “world famous” I mean famous in my world..... which is with my family!  My kids absolutely love this recipe, because I add chocolate chips and cinnamon bark vitality essential oil to the mix.  If you are not a fan of chocolate chips, you can omit them and add walnuts.  Adding a drop of cinnamon bark vitality essential oil, is completely optional.  I just think it adds a little something special to the flavor of this recipe. A word of caution when using essential oils in your cooking, is that not all oil companies are created equal.  I only use Young Living Vitality Essential Oils with my cooking, as they are 100% pure and have recently received the non-GMO accreditation. 

I have experimented quite a bit with the flour in this recipe and I prefer a gluten-free 1:1 baking flour.  I also like Young Living's Einkorn flour, which is easy on my digestive system.  Einkorn is an original grain that is grown in France.  What makes it an original grain, is that it only has 14 chromosomes, making it easier to digest. This recipe makes only 1 loaf, therefore, I generally double the recipe, as it doesn't last long in my house!

Ingredients that you will need:                                                      

1/2 cup unsalted butter, softened                                                                               1 cup sugar                                                                                                                   2 large eggs                                                                                                                          1 teaspoon pure vanilla                                                                                                                   1 drop cinnamon bark vitality EO                                                                               1 1/2 cups mashed bananas                                                                                      1 1/2 cups flour                                                                                                                                                                                              1 1/2 teaspoons baking soda                                                                                          1 teaspoon salt                                                                                                            2/3 cup chocolate chips or chopped walnuts                                                                                                                          

Preheat oven to 350 degrees.  Butter a loaf pan and set aside.  In a large bowl, mix together butter and sugar with an electric mixer, until light and fluffy.  Mix in eggs, vanilla, cinnamon EO and bananas, until combined.                                                                    In a small bowl,  whisk together flour, baking soda and salt.  Add flour mixture to electric mixer and mix until just combined.  Stir in chocolate chips or walnuts.                                                                Pour batter into loaf pan and bake approximately 60-70 minutes, or until toothpick (inserted into center) comes out clean.
